News from…South Africa

South Africa has certainly been a popular destination for IWC team lately. General Manager/Winemaker Tersina as well as Simon were both in South Africa within a few weeks of each other.

Several weeks ago, Tersina was up to her elbows in grape skin and pulp making wine at Thelema, one of the most noted Stellenbosch wine farms.

Tersina said, "All the white grapes came in just before the incredible heat wave, which would have naturally de-acidified the grapes, leaving the wine on the 'flabby' side."

The new vintages of Thelema wine will hit the shelves in Hong Kong soon.

Meanwhile less than a few weeks ago, Simon was one of the International Judges at the Old Mutual Trophy Wine Show in the picturesque Paarl region.

The competition was chaired by international wine expert Michael Fridjhon and the two other International Judges were Dr Tony Jordon, the International Guest Chairman of Judges for the 2009 Cathy Pacific Hong Kong International Wine & Spirit Competition and Alex Hunt, wine buying director of Berkman Wine Cellars, UK. Noted South African wine writers like Angela Lloyd and South Africa's only Master of Wine, Cathy van Zyl, also judged the four-day competition.

Extremely enthused about what he tasted, Simon proclaimed, "South African Chardonnay is as elegant as Charlize Theron and top Pinotages age as gracefully as Sophie Loren!"

Michel and Thierry talk on 2009 Bordeaux Scores

Michel Bettane and Thierry Desseauve are the most respected French wine experts in the world! Talk to chateau owners and grape growers anywhere in France and you will very quickly get a strong sense of how well respected these veteran wine writers and tasters are. Every vintage, they walk the vineyards throughout France before, during and after the harvest, talking to growers, tasting their juice and wine, and very often assisting them with their blending.

They have compiled reviews of hundreds of 2009 Bordeaux based on their comprehensive tastings in November 2009, February 2010 and the April 2010 Primeur Campaign. Where practical, wines from each chateau were tasted three times.

These 2009 Bordeaux scored the maximum 100 points on the Bettane & Desseauve scale:

This was all that remained after an incredible dinner at Domaine de Chevalier hosted by the Bernard Family, also owners of supreme Bordeaux negociant AXA Millesimo. The theme was 1960 dry whites and a wonderful range of wines from the best years.

PERFECT PAIR

Lor Mai Chee with Black Sesame and Red Bean Paste

These Chinese snowballs have pleased generations of children and adults. There are basically three types of fillings for these sticky glutinous flour dough balls. Sweetened small red bean paste is by far the heaviest and most unctuous. It can be almost impenetrable. The black sesame paste has a much defined taste that doesn't resemble anything else; it is just marginally less heavy. The lightest version is filled with a mixture of white sugar, sesame seeds, crushed peanuts and desiccated coconut. As you can imagine, it is also the messiest to eat. The best wine pairing needs to be tough enough to handle the sweet ball and yet impart some additional flavour tones, if possible.
